I'm so glad to have your solidarity on this! When I saw a recipe which said something about how unbelievably easy this cheesecake is, I was wondering if were making the same cheesecake! Let me know if you have a chance to make it! I think next time I will take a risk and take it out around 35 mins, living life on the edge over here haha

I will definitely report back! Recipes for these always say they are easy....haha. Do you subscribe to Nicola Lamb’s Kitchen Projects? I made one with the assistance of her post for Pumpkin Basque cheesecake, which was invaluable

Yes Nicola Lamb's advice as you say is incredible - it was her blog that made me realise that this cheesecake all came down to texture. Can't believe how much time she puts into each kitchen experiment, it's mind blowing quite frankly!
